• Module 1: Introduction to Food Safety and HACCP — Why HACCP matters: foodborne illness risks, UAE food safety regulations, and the business case for certification.
• Module 2: Prerequisite Programs and GMP — Good manufacturing practices, hygiene, cleaning schedules, and pest control as the foundation of a HACCP system.
• Module 3: Hazard Analysis — Identifying biological, chemical, physical, and allergen hazards; assessing risk severity and likelihood; documenting the analysis.
• Module 4: Critical Control Points (CCPs) — Using decision trees to identify CCPs in real food processes, from receiving to service.
• Module 5: Critical Limits, Monitoring and Corrective Actions — Setting measurable limits (temperature, time, pH), monitoring procedures, and what to do when limits are breached.
• Module 6: Verification and Record-Keeping — Validating the HACCP plan, internal audits, and the documentation food inspectors expect to see.
• Module 7: Building and Implementing Your HACCP Plan — Assembling the HACCP team, writing the plan, staff training requirements, and maintaining the system through menu or process changes.
